You don't have to throw everything out. Finish what's open, just don't buy it again. The point is changing the defaults in your kitchen.

Week 2

Five 20-minute dinners

Weeknight meals that replace takeout, each cooked with a different traditional fat so you learn what each one does best.

Tallow + butter

Garlic-Butter Steak with Blistered Green Beans

A restaurant-style sear at home: tallow for the heat, butter for the finish.

Prep
5 min
Cook
15 min
Makes
2 servings

Ingredients

  • 2 strip or ribeye steaks, about 1 inch thick
  • 1 tbsp beef tallow
  • 3 tbsp butter
  • 3 garlic cloves, smashed
  • 2 sprigs fresh thyme or rosemary (optional)
  • 8 oz green beans, trimmed
  • Salt and black pepper
  • Squeeze of lemon

Steps

  1. 1 Pat steaks very dry and season generously with salt and pepper on all sides.
  2. 2 Heat tallow in a cast-iron skillet over high heat until it shimmers. Sear steaks 3–4 minutes per side for medium-rare.
  3. 3 Lower heat to medium. Add 2 tbsp butter, garlic, and herbs. Tilt the pan and spoon the foaming butter over the steaks for 1 minute.
  4. 4 Move steaks to a board to rest 5 minutes.
  5. 5 In the same pan, add the remaining butter and the green beans with a pinch of salt. Cook over medium-high, tossing, until blistered and crisp-tender, 4–5 minutes. Finish with lemon.
  6. 6 Slice the steak against the grain and spoon the pan butter over the top.

Olive oil + butter

Crispy Lemon-Herb Chicken Thighs

Boneless thighs cook fast and stay juicy. A simple olive-oil pan sauce does the rest.

Prep
5 min
Cook
15 min
Makes
4 servings

Ingredients

  • 1½ lb boneless, skinless chicken thighs
  • 2 tbsp extra-virgin olive oil
  • 1 tsp dried oregano
  • ½ tsp garlic powder
  • ½ tsp smoked paprika
  • 1 lemon, zested and juiced
  • ½ cup chicken broth
  • 1 tbsp butter
  • 2 tbsp chopped parsley
  • Salt and black pepper

Steps

  1. 1 Pat chicken dry. Season with salt, pepper, oregano, garlic powder, paprika, and lemon zest.
  2. 2 Heat olive oil in a large skillet over medium-high. Lay the thighs flat and cook without moving for 5–6 minutes until deeply browned.
  3. 3 Flip and cook 4–5 minutes more, until the internal temperature reaches 165°F (74°C). Transfer to a plate.
  4. 4 Add broth and lemon juice to the pan and scrape up the browned bits. Simmer 2 minutes, then swirl in the butter.
  5. 5 Return the chicken to the pan, spoon the sauce over, and finish with parsley.

Tallow or lard

Ground Beef Taco Skillet

Homemade seasoning (no mystery oils) and a one-pan cleanup. Serve in lettuce cups or tortillas.

Prep
5 min
Cook
15 min
Makes
4 servings

Ingredients

  • 1 lb ground beef
  • 1 tbsp beef tallow or lard
  • ½ onion, diced
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp dried oregano
  • 1 tsp salt
  • ½ cup tomato sauce or crushed tomatoes
  • To serve: lettuce cups or corn tortillas, avocado, cilantro, lime, sour cream, shredded cheese

Steps

  1. 1 Heat tallow in a large skillet over medium-high. Add onion and cook 3 minutes until softened.
  2. 2 Add ground beef and break it up. Cook until browned, about 6 minutes.
  3. 3 Stir in all the spices and salt and cook 1 minute until fragrant.
  4. 4 Add tomato sauce and simmer 3–4 minutes until thickened.
  5. 5 Serve in lettuce cups or warm corn tortillas with your toppings. Check tortilla labels: many flour tortillas contain soybean or canola oil; plain corn tortillas usually don't.

Ghee

Sheet-Pan Ghee Salmon with Asparagus

Hands-off and done in under 20. Ghee handles the oven heat without burning.

Prep
5 min
Cook
12 min
Makes
2 servings

Ingredients

  • 2 salmon fillets (about 6 oz each)
  • 1 bunch asparagus, woody ends snapped off
  • 2 tbsp ghee, melted
  • 1 garlic clove, minced
  • ½ tsp dried dill or 1 tbsp fresh
  • 1 lemon, sliced
  • Salt and black pepper

Steps

  1. 1 Heat oven to 425°F (220°C).
  2. 2 Toss asparagus with 1 tbsp ghee, salt, and pepper and spread it on a sheet pan.
  3. 3 Place salmon in the center. Mix the remaining ghee with garlic and dill and brush it over the fillets. Season with salt and top with lemon slices.
  4. 4 Roast 10–12 minutes, until the salmon flakes easily and the asparagus is tender.

Ghee or avocado oil

Ghee Fried Rice with Eggs

Better than takeout, which is almost always cooked in soybean oil. Use leftover rice.

Prep
5 min
Cook
12 min
Makes
3 servings

Ingredients

  • 3 cups cooked rice, chilled (day-old is best)
  • 3 tbsp ghee or avocado oil, divided
  • 3 eggs, beaten
  • 1 cup frozen peas and carrots
  • 3 green onions, sliced
  • 2 garlic cloves, minced
  • 2–3 tbsp soy sauce or coconut aminos
  • 1 tsp toasted sesame oil (optional, for flavor)
  • Optional protein: diced leftover chicken, shrimp, or ham

Steps

  1. 1 Heat 1 tbsp ghee in a large skillet or wok over medium-high. Scramble the eggs until just set, then move them to a plate.
  2. 2 Add 1 tbsp ghee, the peas and carrots, the white parts of the green onions, and the garlic. Stir-fry 2 minutes.
  3. 3 Add the remaining ghee and the rice. Press it into the pan and let it crisp for 1 minute, then toss. Repeat for 4–5 minutes.
  4. 4 Add soy sauce, any protein, and the eggs. Toss until hot. Finish with green onion tops and a few drops of sesame oil.

Note: Toasted sesame oil is technically a seed oil. It is used here in drops for flavor; leave it out if you want to be strict.

Week 3

Mayo, dressings & sauces

Condiments are where seed oils hide most. Make these once and you'll never go back to the bottle.

Light olive or avocado oil

2-Minute Stick-Blender Mayo

Nearly every jar on the shelf is soybean or canola. This one is foolproof.

Prep
5 min
Makes
About 1¼ cups

Ingredients

  • 1 large egg, room temperature
  • 1 tbsp lemon juice or white wine vinegar
  • 1 tsp Dijon mustard
  • ¼ tsp salt
  • 1 cup light-tasting olive oil or avocado oil

Steps

  1. 1 Put the egg, lemon juice, mustard, and salt in a tall jar just wider than your stick blender head.
  2. 2 Pour the oil on top and let it settle for 15 seconds.
  3. 3 Place the blender flat against the bottom of the jar. Turn it on and hold it still for 10–15 seconds until thick mayo forms at the bottom.
  4. 4 Slowly tilt and lift the blender to pull the remaining oil in. Done.
  5. 5 Refrigerate and use within 1 week.

Note: Use a light (not extra-virgin) olive oil. Extra-virgin can turn bitter when blended at high speed. Contains raw egg; use pasteurized eggs for anyone pregnant, immunocompromised, or very young.

Extra-virgin olive oil

Everyday House Vinaigrette

Replaces every bottled dressing in your fridge. Keep a jar on the counter.

Prep
5 min
Makes
About 1 cup

Ingredients

  • ¾ cup extra-virgin olive oil
  • ¼ cup red wine, sherry, or apple cider vinegar
  • 1 tbsp Dijon mustard
  • 1 tsp honey or maple syrup
  • 1 small garlic clove, grated, or 1 tbsp minced shallot
  • ½ tsp salt
  • Black pepper

Steps

  1. 1 Add everything to a jar.
  2. 2 Seal and shake hard for 20 seconds.
  3. 3 Taste and adjust salt or acid. Keeps 2 weeks refrigerated; let it warm a few minutes and shake before using.

Homemade mayo

Real Ranch Dressing

Built on your homemade mayo. Tastes like the restaurant version, minus the soybean oil.

Prep
5 min
Makes
About 1½ cups

Ingredients

  • ½ cup homemade mayo
  • ½ cup sour cream
  • ⅓–½ cup buttermilk
  • 1 tbsp chopped fresh dill (or 1 tsp dried)
  • 1 tbsp chopped chives
  • 1 tbsp chopped parsley
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tsp lemon juice

Steps

  1. 1 Whisk mayo and sour cream until smooth.
  2. 2 Whisk in buttermilk until it reaches your preferred thickness: less for dip, more for dressing.
  3. 3 Stir in herbs, seasonings, and lemon juice.
  4. 4 Chill 30 minutes so the flavors come together. Keeps 5 days.

Beef fat

How to Render Beef Tallow

Turn cheap butcher trimmings into the best frying fat there is.

Prep
10 min
Cook
3 hr
Makes
About 3 cups

Ingredients

  • 2 lb beef fat trimmings (suet is best), very cold
  • ¼ cup water

Steps

  1. 1 Chop the cold fat into ½-inch pieces, or have your butcher grind it. Smaller pieces render faster.
  2. 2 Put the fat and water in a heavy pot over low heat. The water keeps it from scorching before fat starts melting.
  3. 3 Cook uncovered on low, stirring every 20–30 minutes, for 2–3 hours, until the liquid is clear and the solid bits are golden and have sunk.
  4. 4 Strain through a fine mesh strainer lined with cheesecloth or a coffee filter into clean glass jars.
  5. 5 Let cool, then cover. Keeps for months in the fridge or a year in the freezer. Season the crispy leftover bits (cracklings) with salt for a snack.

Note: Keep the heat low. If the fat smokes or the bits turn dark brown, the tallow will taste beefy and scorched instead of clean.

Week 4

Eating out & travel

Your kitchen is sorted. Now for the hard part: everywhere else. The goal is better choices, not perfection.

At restaurants

  • →Ask what they cook with. "Can you make that with butter or olive oil?" works more often than you'd think.
  • →Choose grilled, roasted, steamed, or broiled over fried.
  • →Ask for olive oil and vinegar instead of house dressing.
  • →Steakhouses and Mediterranean restaurants are usually the easiest wins.

Fast food & on the road

  • →Burgers without fries, bunless or with the bun. Skip the sauces.
  • →Burrito bowls: meat, rice, beans, salsa, guacamole, cheese. Skip fried chips and creamy dressings.
  • →Gas stations: hard-boiled eggs, cheese sticks, plain nuts, fruit, beef jerky (check the label).
  • →Look for local spots that advertise tallow fries or olive-oil-only kitchens.

Travel kit

  • →Single-serve olive oil packets or a small leak-proof bottle for salads.
  • →Plain nuts, jerky, and dark chocolate for snacks.
  • →Book a room with a kitchenette when you can. Breakfast is the easiest meal to make yourself.
  • →Hotel breakfast: eggs, fruit, yogurt. Skip the pastries and potatoes.

Social situations

  • →Don't make your host's dinner about you. Eat what works and enjoy the company.
  • →Bring a dish to share. Then you know at least one thing on the table is safe.
  • →An 80/20 approach is sustainable. Control what you can, and don't stress the rest.
